Lemon Chess Pie



1 prepared Pastry Shell (9" size)


4 Eggs


1-1/2 cups Sugar


1/2 cup Lemon Juice


1/4 cup Butter, melted


1 Tbsp. Cornmeal


2 tsp. Flour


1/8 tsp. Salt


In a large bowl, beat eggs for 3 mins. Gradually add sugar, beat for 2 mins. or until mix becomes thick and lemon colored. Beat in lemon juice, butter, cornmeal, flour and salt. Pour into pastry shell. Bake at 350 degrees for 35-40 mins. or until a knife inserted near the center comes out clean. Cool on a wire rack for 1 hr. Refrigerate for at least 3 hrs. before serving.

Makes 6 servings.
